Official servers also have an overall creature level cap, to prevent dinos from becoming too powerful via breeding mutations etc. That cap is 450 for most creatures, 500 for R and X creatures, and dinopithecus. If a creature goes over this cap, the next time the server restarts it will be deleted.(Besides, the OP mentions a level 120 dino, so I suspect difficulty is already at 1.0) Looking at the server config options (which, for the most part, can apply in singleplayer as well), changing rhe number of levels a tamed dino can gain is not a straightforward thing.
